What’s the best thing to eat when attempting to lose weight? Clearly triple chocolate cookies made with the worlds supply of sugar. Now I’m no Jamie Oliver, but I know a cracker of a recipe when I see one. I found a recipe from my friends at BBC Good Food and thought “that’s the one”. I’ve had enough of eating like a rabbit – I’m going to treat myself.
The recipe I found could do with some enhancing so in this blog post I’m going to tell you what I used, what I did and show you some photos to make you extremely jealous.
To start with, I gathered together the following ingredients:-
- 250g of Green & Blacks dark chocolate (70% or 55% depending on your preference – I used 70%)
- 150g of Dairy Milk chocolate
- 100g of brown sugar
- 85g of butter
- A drizzle of vanilla extract
- 100g of self raising flour
- 1 egg
- 100g of smooth peanut butter
- 100g of Milky Bar chocolate
[MAKES 12 COOKIES]
Preheat your oven to180C/gas 4/fan 160C.
To start with, I roughly chopped up 200g of the dark chocolate and 100g of milk chocolate into smaller chunks and kept them separate in different bowls. I then take the remaining chocolate (there should be 50g of each) and melt them together. You can melt it in the microwave but I prefer to melt it above a pan of simmering water. Once the chocolate is melted completely, tip in the sugar, butter, peanut butter, egg and vanilla extract and mix it together until its smooth. If you find that the butter doesn’t melt fully, pop it back on top of the simmering water (or microwave) and just heat it through so that the mixture is smooth.
Next, stir in the flour, the milk chocolate chunks, HALF of the dark chocolate chunks, crumble in the white chocolate and mix it so that all the chocolate chunks are evenly spread throughout the mixture. It should then feel soft and should easily plop off the spoon.
Cover 2 large baking trays with greaseproof paper and put 6 piles of mixture on each tray as these cookies spread out far more than you expect. Once your cookie mix is down, put the remaining dark chocolate chunks on the top of each one so that you have a gorgeous melted surface when they’re done.
Leave the cookies in the oven for 12 minutes or until they have slightly darker brown edges. Don’t be alarmed if they feel squidgy when you take them out as when they cool they’ll harden up. I left them to cool for as long as possible so that they solidified together completely before I moved them. Once they’re cool make sure you move them with a spatula instead of your hands to make sure they don’t break if some haven’t cooled properly in the middle.
And there you have it! 12 triple chocolate cookies made from your favourite chocolate. They should stay crunchy for a few days as long as they remain covered – preferably in a tupperware so no air gets in.
